Actually there's been entire radio shows featuring nothing but versions of Louie Louie.

Also:

Hey Joe. - Definitely a garage staple.
Yesterday (supposed the most-covered song of all time, though I'm unfamiliar with 99.9% of them). Most mid-late Beatles songs have multiple versions anyway.
Just about any "vintage" Christmas song. (Jingle Bells, Winter Wonderland, etc.)

Apparently the 2009 Guinness Book of World Records says there have been over 1,600 cover versions of this song.
