Songs with lotsa versions.
Louie Louie - there's an album of about ten versions of that song.
Who Do You Love - covered by countless garage bands, the Doors, George Thorogood

Actually there's been entire radio shows featuring nothing but versions of Louie Louie.
Also:
Hey Joe. - Definitely a garage staple.
Yesterday (supposed the most-covered song of all time, though I'm unfamiliar with 99.9% of them). Most mid-late Beatles songs have multiple versions anyway.
Just about any "vintage" Christmas song. (Jingle Bells, Winter Wonderland, etc.)

Beatles - Yesterday
Apparently the 2009 Guinness Book of World Records says there have been over 1,600 cover versions of this song.
